Recipe:
1 oz (30ml) Balvenie 14 - week of peat
¾ oz (22.5ml) Cynar
¾ oz (22.5ml) lemon juice
¾ oz (22.5ml) cinnamon syrup
3 dashes/ 4 drops 4:1 saline
2 oz Soda water
Lemon express & Garnish
Glass: Collin’s
Method:
Throw Cocktail 5 times, then pour out over ice and add soda water & incorporate. (if you don't have shaker tins you can build this in the glass) Garnish: smoked cinnamon stick, lemon twist.
Cinnamon syrup:
In a small pot add ½ cup cane sugar, ½ cup water, & 2 cinnamon sticks. Bring to a simmer, turn it down to low and cover for 5 mins, take o heat and keep covered to steep until cool.
Saline:
4 parts water to 1 part sea salt/ or kosher salt. (100g water : 25g salt)
