Banshees are female spirits in Irish folklore that herald the death of family members. Bart’s has been around since the 1970’s and has many fairy tales of its own. With the Banshees of Bart’s Pub I wanted to make a cocktail that screams every tasting note found in Redbreast 12. Stone fruit, lime, oak, and nutty sherry.
The Banshees of Bart's Pub
50 mL Redbreast 12
10 mL Oloroso Sherry
22 mL Soured Granny Smith Apple *
15 mL Caramel Cane Syrup *
Wray & Nephew Rinse
Method: Add all ingredients into shaker tin, shake, double strain into a chilled coupe glass rinsed with Wray & Nephew Overproof Jamaican Rum.
Garnish: None
Glassware: Small coupe
Served: Up
*Soured Granny Smith Apple:
470 mL Fresh Juiced Granny Smith Apple
30 grams Malic Acid
6 grams Ascorbic Acid
*Caramel Cane Syrup:
300 mL Organic Cane Syrup (1.5 sugar by weight to 1 water by volume)
200 grams Caramel Sauce
