Mad Lab Distillery has the coolest set up & epic line up! We will discuss their whisky today, but do yourself a favour and get to know this place, they are so creative & have such fun. PSA for my bitters fans, get yourself some of theirs! They have SO many different options & often use them as an experiment before producing in spirit form! Ok back to the whisky now, but their whole line up is fire.
A really cool thing to know about Mad Lab’s methods is that they ferment with a continuous yeast culture, similar to using a sourdough technique from baking. Their yeast continuously works & has now evolved enough to be a unique strain, allowing for consistent & unique flavours, with a large, healthy culture!
Another fun fact is that they have one of the only direct fire pot stills I know of in Canada! This allows for maximum flavour control while still allowing for the necessary chemical purity required for a high quality craft spirit. The direct flame on the boiler produces a rich, toasty flavour that enhances the overall taste & smoothness. This is clear when you taste their spirits!
Scott Thompson, founder & distiller, is creative in how he keeps the distillery afloat. This place was built on the support from friends and family, entirely grassroots. Even now they do crowdfunding for their whisky as the cost of waiting at least three years to sell it takes its toll. It’s easy to take places for granted but our craft friends especially, rely on us to purchase the incredible things that they’re producing. Holiday shopping? Turn to a craft distillery and share the good stuff! Buying directly from distilleries is the most cost efficient for the consumer and beneficial to the distillery. Let’s all help build up the amazing craft world we have here in BC!
Tasting notes: The nose is full of warm caramel notes with a hint of leather. The palate brings dark chocolate & burnt orange, some tobacco notes with winter baking spices on the finish.
