Known as part of the Modern bourbon movement happening, this Kentucky gem has a unique mash bill blending together corn, malted wheat, honey malted wheat, and malted barley in very small batches of no more than 15 barrels at a time. The name Rabbit Hole makes more sense when we learn that the founder was a career psychologist before meeting his wife who is from Louisville. He then decided to start a spirits company, down the Rabbit Hole indeed! The brand focuses on creativity and leans into finding our true purpose in life in the form of what we love and jumping in. Having created his own mash bill and a unique bourbon, it would seem there’s a solid dose of found purpose with this company.
You’ll notice that there is no rye in this bourbon. That is part of the modern aspect I mentioned. Bourbons featuring wheat over rye are becoming a strong category. By swapping rye with wheat, the distiller can create a more approachable product. The sweetness of the corn plays well with soft and mellow wheat to make a smooth bourbon that is excellent neat or on the rocks and can be enjoyed by both enthusiasts and newbies alike. Another thing that makes this bourbon special is the slow toast they give the barrels before charring them, sometimes taking up to 20 minutes per barrel! When considering an average barrel is charred for an average of 20-60 seconds you begin to see the difference.
Tasting notes: The nose is full of citrus and dark caramel with fresh green apples. On the palate it’s almost an orange creamsicle flavour, that creaminess combined with a splash of mahogany. The wheat brings a soft element that makes it a very approachable dram. The finish continues the leather notes with some custard.
